ALL SHIFTS COVERED--THIRD INSPECTION SHALL BE WAIVED.

FOOD SAFETY MANAGERS HAVE NOT COMPLETED ALLERGEN AWARENESS TRAINING. COMPLETE ALLERGEN AWARENESS TRAINING.

*20  OBSERVED THE CHLORINE SANITIZER DISPENSER INSTALLED AT THE DISHWASHER TO BE MALFUNCTIONING. THE SANITIZER RINSE CYCLE SHALL DISPENSE A SOLUTION WITH 50 PPM OF AVAILABLE CHLORINE [750.820/830]. NOTE: WASH ALL DISHES IN THE 3-COMPARTMENT SINK. 48 HOURS
OBSERVED FOOD INGREDIENT BOTTLES LOCATED ALONG THE MAIN PREP LINE TO HAVE NO LABELS. ALL FOOD PRODUCTS TRANSFERRED FROM THEIR ORIGINAL CONTAINER TO ANOTHER CONTAINER SHALL BE LABELED WITH ITS COMMON NAME [750.120]. NEXT INSPECTION
OBSERVED MULTIPLE FOOD PRODUCTS STORED IN THE WALK-IN COOLER TO HAVE NO OVERHEAD PROTECTION. PROVIDE FOR ALL FOOD PRODUCTS IN STORAGE TO HAVE PROPER COVERS OR OVERHEAD PROTECTION [750.120]. IN ADDITION, I OBSERVED ONE BOX OF ROMAIN LETTUCE IN THE WALK-IN COOLER AND ONE BOX OF BEEF IN THE WALK-IN FREEZER TO BE STORED ON THE FLOOR. PROVIDE FOR ALL FOOD PRODUCTS TO BE STORED AT LEAST SIX INCHES OFF OF THE FLOOR [750.130]. NEXT INSPECTION
10  OBSERVED A FOOD DISPENSING UTENSIL TO BE IMPROPERLY STORED--ONE TONG WAS STORED ON THE TRASH CAN NEXT TO THE REACH-IN COOLER WITHIN THE KITCHEN. PROVIDE FOR ALL UTENSILS TO BE STORED IN ONE OF THE FOLLOWING MANNERS: (1) IN A CLEAN AND DRY CONTAINER, (2) IN THE FOOD PRODUCT WITH THE HANDLE UP AND OUT OF THE FOOD PRODUCT, OR (3) IN A DIPPER WELL, USING POTABLE WATER [750.280]. NEXT INSPECTION
